  • 1/4 cup besan (gram flour) or breadcrumbs
  • 1 tablespoon tamarind paste (optional for tanginess)
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Prepare the Bitter Gourds

  1. Peel the bitter gourds lightly, leaving some skin for texture. You can also scrape off the skin with a knife, if preferred.
  2. Cut off the ends of the bitter gourds and make a slit lengthwise. Use a spoon to scoop out the seeds and the pith from the center, creating space for the stuffing.
  3. To reduce the bitterness, salt the bitter gourds generously and let them sit for 15-20 minutes. Afterward, rinse them under cold water to wash away the excess salt and bitterness.

Step 2: Prepare the Stuffing

  1. Heat oil in a pan on medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and green chili (if using), and cook for another 2-3 minutes until fragrant.
