Ingredients:

  • Leftover rice: 2 cups (cold rice works best)
  • Oil: 2 tablespoons (preferably vegetable or peanut oil)
  • Mustard seeds: 1 teaspoon
  • Cumin seeds: 1 teaspoon
  • Asafoetida (hing): 1/4 teaspoon
  • Curry leaves: A few sprigs (optional)
  • Green chilies: 2-3 (slit or chopped)
  • Onion: 1 medium (finely chopped)
  • Garlic: 4-5 cloves (finely chopped or crushed)
  • Ginger: 1-inch piece (grated)
  • Turmeric powder: 1/4 teaspoon
  • Red chili powder: 1 teaspoon (adjust to taste)
  • Goda masala (or Garam masala): 1 tablespoon
  • Salt: To taste
  • Fresh coriander leaves: For garnish
  • Lemon juice: 1 tablespoon (optional)

Optional Add-ins:

  • Peas: 1/2 cup (if you want a more substantial dish)
  • Fried peanuts: 2 tablespoons
  • Fresh coconut: 1 tablespoon (grated, for extra flavor)

Instructions:

1. Prepare the Rice:

  • Use leftover rice that is cold or at room temperature. If you’re using freshly cooked rice, spread it out on a plate to cool down a bit to avoid it becoming mushy when mixed with the spices.

2. Tempering (Phodani):

  • Heat oil in a pan or wok on medium heat.
  • Add mustard seeds and let them splutter.
  • Once the mustard seeds crackle, add cumin seeds and a pinch of asafoetida (hing).
  • Add curry leaves (optional) and green chilies. Sauté for a few seconds until they release their aroma.
  • Add the chopped onions and sauté until they become translucent.
  • Add garlic and grated ginger and sauté until fragrant.

3. Spicing Up the Rice:

  • Now, add turmeric powder and red chili powder to the pan. Mix well, allowing the spices to bloom in the oil.
  • If you’re using, add peas, fried peanuts, or any other vegetables you like at this point.
  • Stir in the leftover rice and mix everything well so that the rice is evenly coated with the tempering and spices. Be gentle while stirring to avoid breaking the rice grains.

4. Final Touches:

  • Add Goda masala (or garam masala), and salt to taste. Stir to combine.
  • Cook for another 2-3 minutes to ensure the rice is heated through and the flavors are absorbed by the rice.
  • Finish with a squeeze of lemon juice for a tangy kick (optional).
  • Garnish with fresh coriander leaves.

Phodnicha Bhaat can be enjoyed on its own or paired with a side of yogurt, pickle, or a simple salad. It’s also a great side dish for a larger meal or can be packed for lunch.
