Suji Halwa Recipe: Granulated Semolina Pudding That Will Melt Sweetness in Your Mouth

Ingredients:

  • Semolina (Suji) – 1 cup

  • Water – 2 cups (you can also use milk for a richer texture)
  • Cashews – 10-12, chopped
  • Raisins – 10-12
  • Cardamom Powder – 1/2 tsp
  • Saffron strands (optional) – a pinch
  • Rosewater or Orange Blossom water (optional) – 1/2 tsp for fragrance

Instructions:

  1. Roast the Semolina (Suji):
    • In a pan, heat 2 tablespoons of ghee over low heat. Add the semolina (suji) to the pan and roast it while stirring continuously.
    • The semolina will start to release a nutty aroma as it browns. Keep stirring for about 4-5 minutes, ensuring it does not burn. The suji should turn a light golden brown.
  2. Prepare the Sugar Syrup:
    • In a separate saucepan, bring 2 cups of water (or milk) to a boil. Once it starts boiling, add sugar and stir until it dissolves completely.
    • Optionally, add saffron strands to the syrup to infuse color and aroma, or a few drops of rosewater or orange blossom water for added fragrance.
    • Allow the syrup to simmer for a few minutes until it thickens slightly, then remove from heat.
  3. Add the Roasted Semolina:
    • Once the semolina is roasted and fragrant, carefully pour the hot sugar syrup into the pan with semolina, stirring constantly to prevent lumps from forming.
    • Continue stirring, and the mixture will begin to thicken. The semolina will absorb the syrup, becoming soft and smooth.
  4. Add Ghee and Nuts:
    • Add the remaining ghee to the halwa and stir to incorporate. This will give the halwa its rich texture and glossy finish.
    • Add cardamom powder and mix well. You can also add some finely chopped nuts like cashews and almonds at this stage for a crunchy texture.
    • Stir in raisins, which will plump up and add a sweet bite to the halwa.
  5. Cook Until Soft and Smooth:
    • Continue cooking the halwa on low heat, stirring occasionally, until it reaches a soft, pudding-like consistency. The ghee will begin to separate from the halwa when it’s done.
    • Taste and adjust sweetness by adding a little more sugar if needed.
  6. Serve and Enjoy:
    • Serve the Suji Halwa hot, garnished with extra cashews and raisins. You can also sprinkle a pinch of cardamom powder or saffron strands on top for extra aroma.
