Sambaram (Spicy Buttermilk): A Refreshing Traditional Kerala Drink

Sambaram, also known as Spicy Buttermilk, is a popular drink from Kerala, India, often enjoyed during the hot summer months or after a spicy meal. Known for its cooling and digestive properties, Sambaram is an easy-to-make, flavorful, and refreshing drink. It’s made with yogurt, spices, and herbs, offering a tangy, spicy kick. This drink is perfect for hydrating the body while helping with digestion and boosting the immune system.

Ingredients:

  • 1 cup fresh yogurt (curd)
  • 2 cups chilled water
  • 1-2 green chilies (adjust based on spice preference)
  • 1-inch piece of ginger, grated
  • 1 small sprig of curry leaves
  • 1/4 teaspoon cumin powder (jeera powder)
  • 1/4 teaspoon black pepper powder
  • Salt to taste
  • A pinch of asafoetida (hing) (optional)
  • A few fresh coriander leaves for garnish
  • 1/2 tablespoon oil (preferably coconut oil)

Instructions:

Step 1: Prepare the Yogurt

  1. Whisk the yogurt: In a large bowl, whisk the yogurt until smooth and creamy. If the yogurt is thick, add a little water to make it more liquid, but it should still have a slightly thick consistency.
  2. Add water: Gradually add chilled water to the yogurt, whisking continuously until the mixture is smooth and well combined. You can adjust the amount of water to get your desired consistency for the drink.

Step 2: Prepare the Spices and Flavorings

  1. Grind the green chilies and ginger: In a mortar and pestle or using a blender, crush the green chilies and ginger into a coarse paste. This will help release the flavors of the chilies and ginger into the buttermilk.
  2. Temper the spices: Heat oil in a small pan over medium heat. Add the curry leaves and asafoetida (if using). Let the curry leaves splutter, releasing their fragrance. Then, add the ginger-chili paste and sauté for a few seconds until fragrant. Turn off the heat and let the mixture cool for a minute.

Step 3: Combine and Serve

  1. Mix the tempering into the buttermilk: Add the tempering (the mixture of curry leaves, green chili, and ginger) to the prepared yogurt drink. Stir well to combine.
  2. Add spices: Now, add cumin powder, black pepper powder, and salt. Stir again to ensure the spices are evenly distributed.
  3. Garnish: Finally, garnish with freshly chopped coriander leaves for an added burst of freshness.

Step 4: Serve and Enjoy!

  • Chill: For an extra refreshing taste, you can refrigerate the Sambaram for about 15-20 minutes before serving.
  • Serve it chilled in a glass and enjoy this cooling, spicy drink with a traditional meal or as a standalone refreshing drink.
