Zunka Recipe: A Traditional Maharashtrian Delight

Zunka is a simple yet flavorful dish from Maharashtra, India. Made with gram flour (besan) and basic spices, it is a humble yet nutritious food that pairs beautifully with bhakri (millet flatbread) or chapati. Known for its earthy flavors, Zunka is not only delicious but also easy to prepare, making it a favorite comfort food for many.


Ingredients:

  • Gram flour (besan): 1 cup
  • Onion: 1 large, finely chopped
  • Green chilies: 2-3, finely chopped
  • Garlic: 4-5 cloves, minced
  • Turmeric powder: 1/2 tsp
  • Red chili powder: 1/2 tsp
  • Mustard seeds: 1 tsp
  • Cumin seeds: 1/2 tsp
  • Curry leaves: 8-10
  • Oil: 2 tbsp
  • Water: 1 cup (adjust as needed)
  • Salt: To taste
  • Coriander leaves: For garnish

Instructions:

1. Prepare the Base:

  • Heat oil in a pan over medium heat.
  • Add mustard seeds and let them splutter.
  • Toss in cumin seeds and curry leaves. Sauté for a few seconds until aromatic.

2. Sauté Aromatics:

  • Add chopped onions, green chilies, and garlic to the pan.
  • Cook until the onions turn translucent.

3. Add Spices:

  • Stir in turmeric powder, red chili powder, and salt.
  • Mix well to coat the onions evenly with the spices.

4. Incorporate Gram Flour:

  • Reduce the heat to low and add the gram flour gradually while stirring continuously.
  • Ensure there are no lumps, and the flour blends well with the onion mixture.

5. Cook and Thicken:

  • Slowly pour in water, stirring constantly to avoid lumps.
  • Cook on low heat, stirring frequently, until the mixture thickens to a semi-dry consistency.

6. Garnish and Serve:

  • Once done, garnish with freshly chopped coriander leaves.
  • Serve hot with bhakri, chapati, or steamed rice, and enjoy!

Tips for a Perfect Zunka:

  1. Consistency: Adjust the amount of water based on how dry or moist you want the zunka to be.
  2. Flavor Variations: Add vegetables like capsicum or spring onions for added texture and taste.
  3. Oil Choice: Use peanut oil for a more authentic flavor.
  4. Accompaniments: Zunka is often paired with a dollop of homemade butter or yogurt on the side.
