For the Vegetarian Taco Filling:

  • 1 can (15 oz) black beans, drained and rinsed (or use pinto beans, kidney beans, or a mix)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1/4 cup salsa (optional for added flavor)
  • 1/4 cup water or vegetable broth

Instructions:
