Paneer Paratha Recipe: A Delicious Indian Delight

Paneer Paratha is a popular North Indian flatbread stuffed with crumbled paneer (Indian cottage cheese) and seasoned with aromatic spices. Ingredients:

For the Dough:

  • 1 cup whole wheat flour
  • 1/4 tsp salt
  • Water (as required)
  • 1 tbsp oil (optional)

For the Paneer Filling:

  • 1 cup fresh paneer (grated or crumbled)
  • 1-2 green chilies (finely chopped)
  • 1/4 cup finely chopped cilantro (coriander leaves)
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • 1/4 tsp red chili powder
  • Salt to taste
  • 1/2 tsp chaat masala (optional, for added flavor)
  • 1 tbsp lemon juice (optional)

For Rolling and Cooking:

  • Flour (for dusting)
  • Ghee or oil (for cooking)

Instructions:

Step 1: Prepare the Dough

  1. In a mixing bowl, add 1 cup of whole wheat flour, 1/4 tsp salt, and 1 tbsp oil (optional).
  2. Gradually add water little by little and knead the dough until it is soft, smooth, and pliable.
  3. Cover the dough with a damp cloth or plastic wrap and let it rest for about 20-30 minutes.

Step 2: Prepare the Paneer Filling

  1. In a separate bowl, crumble or grate the paneer using a grater.
  2. Add chopped green chilies, cilantro, cumin powder, garam masala, red chili powder, and salt to taste.
  3. Mix the ingredients well. You can also add a bit of lemon juice or chaat masala for extra flavor if you like.
  4. The filling should be well-mixed but not too wet. Adjust the seasoning as needed.

Step 3: Roll the Parathas

  1. After the dough has rested, divide it into equal-sized balls (about the size of a golf ball).
  2. Take one dough ball and roll it into a small circle (about 3-4 inches in diameter).
  3. Place a generous amount of paneer filling in the center of the rolled dough.
  4. Gently bring the edges of the dough together, sealing the filling inside.
  5. Flatten the stuffed dough ball gently with your palms, then roll it out into a circle of about 6-7 inches in diameter, dusting lightly with flour to prevent sticking.

Step 4: Cook the Parathas

  1. Heat a tawa or griddle over medium heat.
  2. Place the rolled-out paratha on the tawa and cook for about 1-2 minutes until small bubbles start appearing on the surface.
  3. Flip the paratha and drizzle a little ghee or oil on the cooked side. Press gently with a spatula to ensure even cooking.
  4. Flip again and apply ghee or oil to the other side. Cook until golden brown and crisp on both sides.
  5. Remove from the tawa and set aside. Repeat the process with the remaining dough balls.
