    • Fresh cilantro (coriander leaves), chopped for garnish
  • For tempering (optional but recommended):
    • 1/2 teaspoon mustard seeds
    • 1 dried red chili
    • A pinch of asafoetida (hing)

Instructions:

  1. Prepare the Mushrooms:
    • Clean the mushrooms gently using a damp cloth or rinse them quickly under water. Slice them into thick pieces. Set aside.
  2. Tempering:
    • Heat 2 tablespoons of oil or ghee in a large pan or wok over medium heat. Add mustard seeds, dried red chili, and a pinch of asafoetida. Let them splutter for a few seconds.
  3. Sauté the Onions and Aromatics:
    • Add cumin seeds to the pan and let them sizzle. Then, add the finely chopped onions and sauté until they turn golden brown, which should take about 6-7 minutes.

    • Add the sliced mushrooms to the pan and mix well. Let the mushrooms cook for about 5-7 minutes. They will release their water, which will eventually evaporate, and the mushrooms will absorb the spices.
  6. Simmer and Cook the Curry:
    • Add water or vegetable broth to the curry. Stir well and let the curry simmer on low heat for 10-15 minutes, allowing the mushrooms to cook through and the flavors to meld together.
    • If you want a creamier texture, stir in fresh cream or coconut milk at this point and cook for another 2-3 minutes.
  7. Final Touch:
