Missi Roti Recipe: A Flavorful Indian Flatbread

Missi Roti is a traditional North Indian flatbread made from a combination of whole wheat flour and gram flour (besan), along with aromatic spices that give it a unique, earthy flavor. This dish is not only a treat for the taste buds but also a wholesome meal packed with protein, fiber, and essential nutrients. It pairs wonderfully with curry, raita, or even a simple pickle.

Ingredients:

  • 1 cup Whole Wheat Flour (Atta)
  • 1/2 cup Gram Flour (Besan)
  • 1 medium Onion, finely chopped (optional)
  • 1-2 Green Chilies, finely chopped (optional)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Carom seeds (Ajwain)
  • 1 tsp Cumin seeds (Jeera)
  • 1/2 tsp Turmeric powder (Haldi)
  • 1 tsp Red Chili powder
  • 1/2 tsp Garam Masala
  • Salt to taste
  • Fresh Coriander leaves, chopped (optional)
  • Water, as needed to knead the dough
  • Ghee or Oil, for roasting

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the whole wheat flour, gram flour, and all the dry spices – carom seeds, cumin seeds, turmeric powder, red chili powder, and garam masala. Add salt to taste. Mix everything together.
  2. Add Wet Ingredients: Add the chopped onions (if using), green chilies, and ginger-garlic paste to the flour mixture. Pour in a little water at a time and knead the dough. The dough should be soft but firm enough to roll out. Once kneaded, cover the dough with a damp cloth and let it rest for 10-15 minutes.
  3. Rolling the Roti: After resting, divide the dough into small balls (about the size of a lemon). Lightly flour your rolling surface and rolling pin. Roll each dough ball into a round shape, about 6-7 inches in diameter. If the dough sticks, you can dust it lightly with more flour.
  4. Cooking the Missi Roti: Heat a tava or a flat skillet on medium heat. Once hot, place the rolled roti onto the tava. Let it cook for about 1-2 minutes until bubbles start to form on the surface. Flip the roti and cook the other side for 1-2 minutes. Now, apply ghee or oil on both sides and press gently with a spatula to cook the roti evenly.
  5. Serve Hot: Once cooked to a golden brown color, remove the roti from the tava. Repeat the process with the remaining dough balls. Serve the Missi Roti hot with your favorite curry, raita, or pickle.

Tips for the Perfect Missi Roti:

  • Consistency of the Dough: The dough for Missi Roti should be slightly softer than regular roti dough to make it easy to roll out.
  • Flavor Boost: You can add finely chopped fresh coriander leaves for an extra burst of flavor.
  • Make it Soft: Adding a little yogurt to the dough can make the roti softer and add a pleasant tang.
  • Serving Suggestions: Missi Roti pairs perfectly with curries like Dal Tadka, Aloo Gobi, or a cooling cucumber raita.

Health Benefits: Missi Roti is an excellent source of protein and fiber, thanks to the combination of wheat flour and gram flour. It aids in digestion, promotes satiety, and is great for those looking for a healthy, nutritious meal. The spices add their own health benefits, such as anti-inflammatory properties and digestive aid.

Enjoy this flavorful and nutritious Indian bread at breakfast, lunch, or dinner.
