Ingredients

For the Dough:

  • Salt to taste
  • Water (as needed to make the dough)

For the Matar (Green Pea) Filling:

  • 1 cup fresh or frozen green peas (matar)
  • 1 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ginger paste
  • 1-2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 tablespoon chopped cilantro (coriander leaves)
  • 1 tablespoon lemon juice

For Frying:

  • Oil for deep frying

Instructions

1. Preparing the Dough:

  1. In a large mixing bowl, combine the all-purpose flour (maida), semolina (sooji), and carom seeds (ajwain).
  2. Add the ghee or oil and rub it into the flour mixture until it resembles breadcrumbs.
  3. Add salt to taste, and gradually add water to form a smooth and firm dough. The dough should not be too soft.
  4. Cover the dough with a damp cloth and let it rest for 20-30 minutes while you prepare the filling.

2. Making the Matar (Green Pea) Filling:

  1. If using frozen peas, blanch them in hot water for a couple of minutes, then drain and set aside. For fresh peas, just wash them thoroughly.
  2. Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the ginger paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
  4. Add the peas, turmeric powder, coriander powder, red chili powder, and salt. Cook for 5-7 minutes, stirring occasionally.
  5. Once the peas soften, mash them lightly with a masher or back of the spoon, leaving some peas whole for texture.
  6. Stir in garam masala, cilantro, and lemon juice. Mix well and cook for another 2 minutes. Remove from heat and let the filling cool completely.

3. Shaping the Kachoris:

  1. Divide the dough into small equal-sized balls, about the size of a golf ball.
  2. Flatten each dough ball into a small disc using your palms or a rolling pin.
  3. Place a spoonful of the prepared matar filling in the center of each disc.
  4. Carefully fold the edges of the dough over the filling, pinching them together to seal it completely.
  5. Gently flatten the stuffed dough ball into a round shape. Repeat this process for the rest of the dough and filling.

4. Frying the Khasta Matar Kachoris:

  1. Heat oil in a deep frying pan or kadhai over medium heat. The oil should be hot but not smoking.
  2. Carefully slide the prepared kachoris into the hot oil, a few at a time. Don’t overcrowd the pan.
  3. Fry the kachoris, flipping them occasionally, until they turn golden brown and crispy. This should take about 4-5 minutes.
  4. Remove the kachoris from the oil and drain them on paper towels to remove excess oil.
