Dal Banjara: A Flavorful Journey of Indian Cuisine

Dal Banjara, also known as “Banjara Dal,” is a rich and flavorful dish that hails from the heart of India. Ingredients:

  • 2 tomatoes, finely chopped
  • 1 green chili, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon coriander powder
  • 1 tablespoon ghee (clarified butter)
  • 1 tablespoon vegetable oil
  • Fresh coriander leaves, chopped
  • Salt to taste
  • Water as needed

For tempering:

  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • A pinch of asafoetida (hing)
  • 1 tablespoon ginger-garlic paste

Instructions:

Step 1: Prepare the Lentils

  1. Wash and Soak: Start by washing the toor dal, masoor dal, and chana dal thoroughly. Soak them in water for about 30 minutes to soften the lentils.
  2. Cook the Lentils: In a large pressure cooker or pot, add the soaked lentils and enough water to cover them. Cook until the lentils are soft and mushy. In a pressure cooker, cook for about 3-4 whistles. If cooking in a pot, simmer for 20-25 minutes, adding water as required. Once cooked, mash the lentils lightly to give them a creamy texture.

Step 2: Prepare the Tempering

  1. Heat Ghee and Oil: In a large pan, heat the ghee and vegetable oil together over medium heat.
  2. Add Spices: Once the oil is hot, add cumin seeds, mustard seeds, and dried red chilies. Let them splutter for a few seconds.
  3. Add Ginger-Garlic Paste: Add the ginger-garlic paste and sauté for 2-3 minutes until fragrant and golden brown.
  4. Add Onions: Add the chopped onions and cook until they turn translucent and soft.
  5. Add Tomatoes and Spices: Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the masala.

Step 3: Combine the Lentils with the Tempering

  1. Add Cooked Lentils: Once the onion-tomato masala is ready, add the cooked lentils to the pan. Stir to combine everything well.
  2. Simmer the Dal: Add a little water to achieve your desired consistency. Let the dal simmer for 10-15 minutes on low heat, allowing the flavors to meld together.
  3. Finish with Garam Masala: Sprinkle garam masala and adjust salt if needed. Stir well.

Step 4: Final Tempering (Tadka)

  1. Prepare Tadka: In a small pan, heat ghee and add cumin seeds, dried red chilies, and a pinch of asafoetida. Once they sizzle, add the ginger-garlic paste and sauté for 1 minute.
  2. Pour over Dal: Pour this hot tadka over the simmering dal to infuse it with rich flavors.

Step 5: Garnish and Serve

  1. Garnish: Garnish the Dal Banjara with freshly chopped coriander leaves.
  2. Serve Hot: Serve this delicious dal with steamed rice, roti, or naan. A side of pickle and yogurt complements the meal perfectly.

Tips for the Perfect Dal Banjara:

  • Lentil Variation: You can adjust the proportion of lentils based on your preference. Toor dal and masoor dal are the most common, but you can add moong dal for a lighter texture.
  • Consistency: Adjust the consistency of the dal by adding more or less water. Dal Banjara is usually thick, but you can make it soupier if you prefer.
  • Smoky Flavor: For an added depth of flavor, you can add a pinch of smoked paprika or ghee at the end for a smoky aroma.
