Ingredients:

For the Dosa Batter:

  • 1 cup rice flour
  • 2 tablespoons besan (gram flour)

  • Water (as needed for consistency)

For the Masala (Filling):

  • 2 medium-sized potatoes, boiled and mashed
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1-2 green chilies, chopped
  • 1 onion, finely chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala or sambar masala
  • Salt to taste
  • Fresh coriander leaves (for garnish)

For Cooking:

  • Ghee or oil

Method:

Step 1: Prepare the Dosa Batter

  1. In a mixing bowl, combine rice flour, besan (gram flour), turmeric powder, and salt.
  2. Gradually add water while stirring continuously to make a smooth batter. The consistency should be like a pancake batter – not too runny but easy to spread.
  3. Let the batter sit for 2-3 minutes while you prepare the masala.

Step 2: Prepare the Masala (Filling)

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
  2. Add chopped green chilies and onions. Sauté until the onions turn golden brown.
  3. Stir in turmeric powder and garam masala (or sambar masala). Mix well.
  4. Add the mashed potatoes and salt. Cook for 2-3 minutes, stirring occasionally.
  5. Garnish with fresh coriander leaves and set aside.

Step 3: Make the Dosa

  1. Heat a non-stick tawa (griddle) on medium-high heat and lightly grease it with ghee or oil.
  2. Pour a ladleful of the dosa batter onto the hot tawa and spread it evenly into a thin circle, starting from the center and moving outwards.
  3. Drizzle a little more oil or ghee around the edges and cook until the dosa turns golden and crispy, about 2-3 minutes.
  4. Once the dosa is crispy, flip it over and cook for another minute (optional for extra crispiness).

Step 4: Assemble the Dosa

  1. Place a generous portion of the prepared potato masala in the center of the dosa.
  2. Fold the dosa over the filling, forming a half-moon or triangle shape.

Step 5: Serve
