Chaat Tikki (Chole Tikki Chaat): A Delicious Indian Street Food Delight

Chaat is an umbrella term for a wide range of mouthwatering Indian snacks that are often enjoyed on the streets or at social gatherings. One of the most popular and beloved chaat varieties is Chole Tikki Chaat, a fusion of crispy, golden tikkis (potato patties) served with spicy chickpea curry (chole) and topped with a variety of chutneys and seasonings. This delicious dish is packed with flavor and is sure to tantalize your taste buds.

Ingredients:

For the Tikkis (Potato Patties):

  • 4 large boiled potatoes
  • 1/2 cup boiled and mashed green peas (optional)
  • 2 tablespoons corn flour (or rice flour for extra crispiness)
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves (chopped)
  • Oil for shallow frying

For the Chole (Chickpea Curry):

  • 1 cup boiled chickpeas (chole)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dry mango powder)
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • 1 tablespoon oil

For the Chaat Toppings:

  • 1/4 cup tamarind chutney
  • 1/4 cup mint chutney
  • 1/2 cup yogurt (whisked)
  • Chaat masala (to taste)
  • Red chili powder (optional)
  • Fresh coriander leaves for garnishing
  • Sev (crispy chickpea noodles) for crunch
  • Pomegranate seeds (optional)

Instructions:

Step 1: Prepare the Tikkis

  1. Mash the potatoes: Peel and mash the boiled potatoes in a large mixing bowl. Add the boiled and mashed peas (if using) to the mixture.
  2. Season: Add cumin powder, red chili powder, garam masala, and salt to taste. Add chopped coriander leaves and mix well.
  3. Bind the mixture: Add corn flour (or rice flour) to the mixture to help bind the tikkis. If the mixture feels too soft, you can add a little more corn flour until the consistency is firm enough to form patties.
  4. Shape into Tikkis: Take small portions of the mixture and shape them into round or oval-shaped patties.
  5. Fry the Tikkis: Heat oil in a shallow frying pan. Fry the tikkis on medium heat until they turn golden brown and crispy on both sides. Once done, remove them and place them on a paper towel to absorb excess oil.

Step 2: Prepare the Chole (Chickpea Curry)

  1. Temper the spices: Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Cook the onion and tomato: Add the finely chopped onions and sauté until they turn golden brown. Add the chopped tomatoes and green chili, and cook until the tomatoes soften.
  3. Add the spices: Add coriander powder, turmeric powder, garam masala, and amchur. Stir well.
  4. Add chickpeas: Add the boiled chickpeas to the pan along with a little water to form a thick curry-like consistency. Season with salt and cook for 5-10 minutes to blend the flavors.
  5. Garnish: Garnish with fresh coriander leaves.

Step 3: Assemble the Chaat Tikki

  1. Place the Tikkis: On a serving plate, arrange the crispy tikkis.
  2. Add Chole: Spoon the warm chickpea curry over the tikkis.
  3. Top with Chutneys: Drizzle tamarind chutney and mint chutney over the tikkis and chole mixture.
  4. Add Yogurt: Pour a generous amount of whisked yogurt over the chaat to add a cool and creamy texture.
  5. Season: Sprinkle chaat masala, red chili powder (if you like extra heat), and a pinch of salt.
  6. Garnish and Finish: Garnish with fresh coriander leaves, crispy sev, and optional pomegranate seeds for a burst of color and crunch.

Tips for Perfect Chaat Tikki:

  • Crispy Tikkis: Ensure the tikkis are fried on medium heat to avoid burning them before they become crispy. You can also freeze the tikkis for a few minutes before frying for extra crispiness.
  • Chole Variations: You can add a pinch of black salt or a dash of garam masala to the chickpea curry for extra depth of flavor.
  • Vegan Option: Replace yogurt with a dairy-free alternative such as coconut yogurt for a vegan-friendly version of this dish.

Conclusion:

Chole Tikki Chaat is a true feast for the senses—crispy tikkis, spicy chickpeas, tangy chutneys, and cool yogurt come together to create an unforgettable snack. Whether you’re hosting a party, enjoying a family meal, or simply indulging in street food nostalgia, this dish is sure to be a hit with everyone. Enjoy the burst of flavors and textures in every bite!

Pro Tip: Try adding a squeeze of fresh lemon juice for a zesty finish or a sprinkle of pomegranate seeds for a touch of sweetness and crunch. Happy eating!
