Bhutta Ka Paratha: A Delicious Corn Paratha Recipe

Bhutta ka Paratha, a delightful and unique Indian flatbread, combines the sweetness of fresh corn (bhutta) with the savory flavors of spices. This flavorful paratha is not only easy to make but also makes for an ideal breakfast or lunch dish. The addition of corn brings a sweet, soft texture to the dough, making this paratha a hit with both kids and adults alike. Pair it with yogurt, pickle, or raita for a satisfying meal.

Let’s dive into the recipe and learn how to make Bhutta ka Paratha step by step.

Ingredients:

For the Dough:

  • 1 cup whole wheat flour (atta)
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 tablespoon oil or ghee
  • Salt to taste
  • 1/2 teaspoon red chili powder (optional)
  • Water, as needed

For the Filling:

  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 teaspoon cumin seeds (jeera)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon finely chopped cilantro (optional)
  • 1/4 teaspoon garam masala
  • 1 tablespoon finely chopped green chilies (optional)

To Cook:

  • Ghee or oil for frying

Instructions:

Step 1: Prepare the Dough

  1. Boil the Corn: If using fresh corn, boil the corn kernels in water for about 5-7 minutes until they are tender. Drain the water and let them cool.
  2. Make the Dough: In a mixing bowl, add the whole wheat flour, boiled corn, salt, red chili powder (if using), and oil or ghee. Begin kneading the dough by adding water gradually, just like you would for regular paratha dough. Knead the dough until it becomes soft and pliable. Cover with a damp cloth and set aside for 15-20 minutes.

Step 2: Prepare the Filling

  1. Grind the Corn: In a food processor or using a mortar and pestle, grind the boiled corn kernels to a coarse texture. You can also mash them using a fork, but a slightly coarser texture works better for the filling.
  2. Spice the Corn: Heat a little oil in a pan. Add cumin seeds, and once they splutter, add the turmeric powder, red chili powder, garam masala, and green chilies. Stir the spices for a few seconds.
  3. Add Corn: Add the mashed corn to the pan, and mix well. Cook for 2-3 minutes on medium heat until the mixture is well-cooked. Season with salt and mix in the chopped cilantro. Set aside to cool.

Step 3: Assemble the Paratha

  1. Divide the Dough: Take small portions of the dough and roll them into smooth balls, about the size of a golf ball.
  2. Stuff the Dough: Flatten each dough ball into a small disc using your fingers or a rolling pin. Place a spoonful of the corn filling in the center.
  3. Seal the Paratha: Fold the edges of the dough over the filling, pinching them together to seal the stuffed ball. Gently flatten the stuffed dough ball into a round paratha with your fingers or a rolling pin. Be careful not to let the filling leak out.

Step 4: Cook the Paratha

  1. Heat the Tawa/Griddle: Heat a tava or non-stick pan over medium heat.
  2. Cook the Paratha: Place the rolled paratha on the hot tawa. Cook for about 1-2 minutes until small bubbles start to appear on the surface. Flip the paratha and cook the other side for another minute.
  3. Apply Ghee or Oil: Drizzle ghee or oil over both sides and cook until the paratha is golden brown and crispy on both sides.
  4. Repeat: Repeat the process for the remaining dough and filling.

Step 5: Serve

Serve the hot Bhutta ka Paratha with yogurt, pickle, or raita for a wholesome meal. The corn filling makes it juicy and flavorful, so it’s delicious on its own too.

Tips and Variations:

  • Sweetcorn Variation: You can also use sweet corn for a slightly sweeter flavor. It works especially well in the filling for a more indulgent version of this paratha.
  • Add More Veggies: You can mix finely chopped onions, carrots, or spinach into the filling for extra flavor and nutrition.
  • Spicy Kick: For a spicier version, add finely chopped green chilies and a pinch of chaat masala or black pepper to the dough or filling.

Conclusion:

Bhutta ka Paratha is a fun and creative way to enjoy corn in a savory form. It’s an excellent option for breakfast, lunch, or dinner, offering a fusion of flavors with a delightful crunch. Whether you’re cooking it for a special occasion or just a simple meal at home, this paratha will quickly become a favorite in your recipe collection. Enjoy the sweet, savory goodness of Bhutta ka Paratha with your loved ones!
