Instructions:

Step 1: Preparing the Arbi

  1. Wash and Peel: Begin by thoroughly washing the Arbi roots under running water to remove any dirt. Peel the outer skin of the Arbi using a vegetable peeler or knife. The outer layer can sometimes feel sticky, so you might want to wear gloves while peeling to avoid irritation.
  2. Boil the Arbi: Cut the peeled Arbi into medium-sized pieces. Add these pieces to a pot of water and boil them for 10-12 minutes or until they become soft but not mushy. You can check their softness by pricking a piece with a fork. Drain the water and set the boiled Arbi aside.

  1. Add Garam Masala & Tang: Once the Arbi is cooked well, sprinkle garam masala and dry mango powder (amchur) or a squeeze of lemon juice for a tangy twist. Stir to combine everything.
