  • 2 tablespoons mint leaves, chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder

  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1/4 cup breadcrumbs (for binding)
  • 1 tablespoon cornflour or besan (chickpea flour)
  • 2 tablespoons oil for cooking

For Garnish:

  • Fresh coriander leaves
  • Sliced onions
  • Lemon wedges

Instructions:

1. Preparing the Chana Dal:

  • Rinse the chana dal under running water until the water runs clear.
  • In a medium saucepan, add the chana dal and enough water to cover it. Bring it to a boil and then let it simmer on medium heat for about 20-25 minutes, or until the dal is soft but still holds its shape. Be careful not to overcook it.
  • Drain any excess water and let the dal cool completely.

2. Making the Kebab Mixture:

  • Once the chana dal is cool, transfer it to a mixing bowl. Using a potato masher or a food processor, mash the dal slightly, leaving a few whole pieces for texture.
  • In the same bowl, add finely chopped onions, green chilies, coriander leaves, mint leaves, ginger-garlic paste, and all the dry spices (cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, and salt).

  • Repeat the process with the remaining mixture.

4. Cooking the Kebabs:

  • Heat 1-2 tablespoons of oil in a non-stick pan over medium heat.
  • Once the oil is hot, place the shaped kebabs in the pan, making sure not to overcrowd them.
  • Cook the kebabs for 3-4 minutes on each side or until they turn golden brown and crispy. You may need to add more oil in between batches to ensure the kebabs cook evenly.

5. Serving:

  • Once the kebabs are cooked, remove them from the pan and drain excess oil on paper towels.
