Ingredients:
- For the Dough:
- 1 cup whole wheat flour (atta)
- 2 tbsp oil or ghee
- 1/4 tsp salt (optional)
- Water as needed (approximately 1/3 cup)
- For the Filling:
- 1 bunch of spring onions, finely chopped
- 1 green chili, finely chopped (optional, adjust to taste)
- 1/2 tsp cumin seeds
- 1/4 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala (optional)
- Salt to taste
- Fresh coriander leaves, chopped (optional)
- For Cooking:
- Ghee or oil (for frying the parathas)
Method:
Step 1: Prepare the Dough
- In a large mixing bowl, add the whole wheat flour and salt.
- Gradually add water and knead the mixture into a soft, smooth dough. Start with a little water and increase as needed.
- Once the dough is well kneaded, cover it with a damp cloth and let it rest for 10-15 minutes. This makes the dough softer and easier to roll out.
Step 2: Prepare the Filling
- Heat a pan over medium heat and add a teaspoon of oil.
- Once the oil is hot, add cumin seeds and sauté them until they splutter.
- Add the finely chopped spring onions and sauté for about 2-3 minutes, until they soften.
- Add the chopped green chilies, red chili powder, turmeric, garam masala, and salt. Cook the mixture for another minute until the spices blend well with the spring onions.
- Remove from heat and let the filling cool down for a few minutes. You can also add some chopped coriander leaves for an extra fresh flavor.
Step 3: Roll the Parathas
- Divide the dough into small equal-sized balls, about the size of a golf ball.
- Take one ball and flatten it slightly with your hands. Then, roll it out into a small disc using a rolling pin.
- Place a spoonful of the spring onion filling in the center of the rolled-out dough.
- Carefully fold the edges of the dough over the filling to form a pouch. Pinch the edges to seal the filling inside.
- Roll the stuffed dough ball again gently into a flat, round paratha. Be careful not to let the filling spill out.
Step 4: Cook the Paratha
- Heat a tawa or griddle over medium-high heat. Once hot, place the rolled paratha on the tawa.
- Cook for about 1-2 minutes on one side until bubbles start to form. Flip the paratha using tongs and apply a little ghee or oil on the cooked side.
- Flip it again and cook for 1-2 minutes until both sides are golden brown and crisp.
- Repeat the same process with the remaining dough balls.
Step 5: Serve
Once cooked, serve the Spring Onion Parathas hot with yogurt, pickle, or a dollop of butter for an extra indulgence. You can also enjoy them with a cup of tea or lassi for a complete meal.
Tips for Best Results:
- Dough Consistency: Ensure that the dough is soft and pliable. This will help in rolling out the parathas easily and ensure they are soft and flaky.
- Filling Variations: You can add finely chopped spinach, cabbage, or even grated cheese to the filling for a different flavor twist.
- Cooking Tips: If you like extra crispy parathas, apply a little more oil or ghee while cooking, or cook the paratha on a low flame for a longer time.
Spring Onion Paratha is not only a great way to start your day but also an excellent snack for lunch or dinner. Its light, savory taste and crispy texture will leave you wanting more. Enjoy!
