Kadala Curry Recipe: A Taste of South India

Ingredients:

For the Curry:

  • 1 cup black chickpeas (kadala), soaked overnight
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit
  • 1-inch piece ginger, minced
  • 4-5 garlic cloves, minced
  • 1 sprig curry leaves
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste

For the Coconut Masala:

  • 1 cup grated coconut
  • 1 tsp fennel seeds
  • 4-5 dried red chilies
  • 1 tbsp coconut oil

Instructions:

1. Preparing the Black Chickpeas:

  1. Drain the soaked chickpeas and pressure cook them with 3 cups of water, ½ tsp turmeric powder, and a pinch of salt. Cook for about 4-5 whistles or until the chickpeas are soft. Set aside.

2. Making the Coconut Masala:

  1. Heat 1 tbsp coconut oil in a pan.
  2. Add the grated coconut, fennel seeds, and dried red chilies. Roast on low heat until the coconut turns golden brown.
  3. Allow the mixture to cool, then grind it into a smooth paste using a little water.

3. Preparing the Kadala Curry:

  1. Heat 2 tbsp coconut oil in a deep pan.
  2. Add mustard seeds and let them splutter. Add curry leaves for a burst of aroma.
  3. Add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
  4. Stir in the tomatoes and cook until soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and garam masala. Sauté the spices until fragrant.
  6. Add the cooked chickpeas along with their cooking water. Stir well and bring to a simmer.
  7. Mix in the prepared coconut masala paste. Adjust the consistency by adding water if needed. Let it simmer for 8-10 minutes, allowing the flavors to meld together.

4. Final Touch:

  1. Taste and adjust salt and spices.
  2. Garnish with a few curry leaves and drizzle a teaspoon of coconut oil on top for added flavor.
