Ingredients:

For the Uttapam:

  • 1 cup dosa batter

  • 1/2 teaspoon chili flakes (optional)
  • 1 small capsicum, finely chopped
  • Butter for toasting

Instructions:

Step 1: Prepare the Uttapam Base
  1. Heat a non-stick tawa (griddle) and lightly grease it with oil or ghee.
  2. Pour a ladleful of dosa batter onto the tawa and spread it to form a thick pancake.
  3. Sprinkle chopped onions, tomatoes, green chili, grated carrot, and coriander on top. Press gently so the toppings stick to the batter.
  4. Cook on medium heat until the underside turns golden brown, then flip and cook the other side briefly. Repeat to make more uttapams. Set them aside.
Step 2: Assemble the Sandwich
  1. Take one uttapam and place it topping-side up on a plate.
  2. Spread a generous layer of grated cheese on the plain side. Add a sprinkle of mixed herbs, chili flakes, and chopped capsicum for flavor.
  3. Place another uttapam on top, topping-side out, to form a sandwich.
Step 3: Toast and Serve
  1. Heat butter on the tawa and place the sandwich. Press gently with a spatula to ensure it cooks evenly.
  2. Toast until the cheese melts and the uttapam turns crisp. Flip carefully and toast the other side.
  3. Remove from the pan, slice into halves or quarters, and serve hot with coconut chutney or ketchup.
